Strawberries n’ Cream Cake
The Strawberries n’ Cream Cake is another popular recipe on Pinterest, and for good reason! It’s one good looking cake and does not disappoint the taste buds. This recipe comes from Taste of Home. You can find the recipe here.
I’m going to outline some tips to make sure your cake comes out just as nicely as ours did.
The Tube Pan:
The recipe calls for a 10 inch tube pan. We specifically used a 9.5inch tube pan because that’s all we could find. We grabbed one similar to this:
The key is to use a tube pan that has a removable base. The recipe says to use an ungreased tube pan. Not sure if greasing the pan will cause any issues (maybe the whipped cream topping won’t adhere as well?). It will make it very easy to remove the cake from the pan once it’s cooled with a 2-piece tube pan. We had no issues!
My Cake Didn’t Rise!
While we did not experience this, from our research we did find some people who tried to make the Strawberries n’ Creak Cake had issues with their cake not rising when baked. The tips we found were to:
- Make sure you do not get any egg yolks in your egg whites (until it’s actually time to mix them).
- Make sure your egg whites are whipped enough for glossy peaks to form.
Let the Cake Cool Entirely!
Do not skip this step! Allow the cake to cool completely once it’s been baked. This will take at least 30 minutes. If you apply the whipped topping before it cools, it will be a messy sight.
Will the Strawberries Stick?
Our main concern when making this cake was that the strawberries may not stay in place when place on the sides of the cake. Fortunately, this was not an issue. The strawberries stayed in place, even on the leftover pieces we stored in the fridge over night!
